I’ve enjoyed a couple different grilled cheeses at Papi Queso at Sycamore Brewing’s Food Truck Friday in South End. But I just had the Green Chile Philly and it stands above the rest. This isn’t your basic grilled cheese. The combination of gooey provolone and American cheeses, tender braised beef, grilled onions, and roasted poblano peppers oozing between perfectly grilled bread packs big time flavor into every bite. The mild kick of the peppers is really the highlight of the sandwich. This is definitely worthy of the starter role, and may even be borderline all star. I could order a couple and still come back for more. And it goes nicely with a variety of cold brews at Sycamore. Papi Queso operates out of the brewery’s pop up kitchen throughout the week and the food truck also hops around the greater Charlotte area. I’d check Twitter for their locale on a given day.
