The roasted bone marrow at bestia is unlike any I've had before. It's served on a bed of spinach gnocchetti with crispy breadcrumbs and aged balsamic. You scrape out the marrow and mix it into the pasta...and it's amazing. The pasta is great on it's own and the marrow adds another beautiful layer. Note: if a man in a striped shirt holding a bottle of sherry appears out of nowhere, go ahead and agree to do the bone luge. He's an amazing salesman and will convince you.
